Try out this tasty side dish for your kiddo which is full of nutrients. Beans are a good source of copper, vitamin B1, chromium, magnesium, calcium, potassium, phosphorus, choline, vitamin A (in the form of carotenoids), niacin, protein, omega-3 fatty acids, iron, vitamin B6, and vitamin E. Adding carrots and coconut will make the dish healthier.

Ingredients to make French Beans and Carrots Thoran, Kerala Dry Sabzi:
1¼ cups chopped French beans, 3/4 cup chopped carrots, ¼ cup freshly grated coconut, ¼ tsp turmeric powder, 1 tsp chili powder, ¼ tsp cumin seeds, 1 tsp crushed garlic, 2 tbsp oil, ¼ tsp mustard seeds, 1 tsp urad dal, 5 to 6 curry leaves, 2 whole dry Kashmiri red chiles (broken into pieces), ¼ cup finely chopped onions, salt to taste,1 tsp coconut oil
Steps to make French Beans and Carrots Thoran, Kerala Dry Sabzi:
1. Make a mixture of coconut, turmeric powder, chili powder, cumin seeds, and garlic in a plate. Mix it well and keep aside.
2. Heat oil in a wok and add the mustard seeds, urad dal, curry leaves and red chillies and fry on a medium flame for a few seconds
3. Now add the onions, beans, carrot, and salt, and saute on a medium flame for 2 minutes.
4. Add 2 tbsp. water and mix it well. Cover the pan with a lid and let it cook on a medium flame for 5 to 6 minutes, while stirring occasionally.
5. Finally, add the already prepared dry spices-coconut mixture and coconut oil.
6. Mix well and cook on a medium flame for 1 minute. Stir it in between.
Serve hot with phulkas. Enjoy!
