A twist to the regular khichdi where lentils and rice are used can be done using wheat. Wheat is a good source of carbohydrates and yellow moong dal has valuable protein. By combining both these ingredients, you can prepare Gehun ki Bikaneri Khichdi. Flavour this khichdi with asafoetida and cumin seeds, which enhances the taste and aroma of this dish.

1 cup wheat, ¼ cup yellow moong dal, 2 tbsp ghee, ½ tsp cumin seeds, 2 green chillies, a pinch of asafoetida, salt to taste, a pinch of turmeric, 1 tsp oil
1. In a bowl, add the wheat. Clean, wash and soak the whole wheat with enough water overnight.
2. Wash the yellow moong dal and soak for about 2 hours.
3. In a blender, add the whole wheat and blend to a coarse paste without adding water.
4. In a pressure cooker, add oil, asafoetida, turmeric, cumin seeds and green chiles. Saute for a minute.
5. Add the coarse wheat and yellow moong dal. Saute for about 2 minutes.
6. Add salt and about 4 cups of water. Give a good mix.
7. Pressure cook for 6 to 7 whistles.
8. Once the pressure gets cooled, hot and nutritious Gehun ki Bikaneri Khichdi is ready. Add ghee on top and give a good mix. Serve hot with crisp papad. Enjoy!
