Gingered Yam Soup

Made with sweet potatoes and seasoned with ginger, pepper, coconut milk, this creamy soup is topped with roasted peanuts. Your kiddo would love it!

    Ingredients to make Gingered Yam Soup:

    3 cups diced yams, 1.5 cup vegetable broth, 1 tsp ground ginger, 1 cup unsweetened coconut milk, 1 tbsp lime juice, ½ tsp coriander, 1/4 almonds chopped

    Steps to make Gingered Yam Soup:

    1. Combine yams, vegetable stock and ginger in a bowl and bring to boil. Reduce heat; cover and simmer for about 10 minutes or until potatoes are tender.

    2. Blend the mixture into smooth puree.

    3. Pour mixture in the pan; stir in coconut milk, lime juice, salt, pepper, and coriander.

    4. Cook for another 5 minutes

    Garnish with toasted almonds and coriander.
