Goan Foogath Yard

This is a tasty recipe for your kid prepared from long beans cooked along with coconut. Long beans are a good source of protein, vitamin A, and folate.

    Ingredients to make Goan Foogath Yard:

    1 cup beans/eeril/chowli green beans cut into 2 inch long size, ½ cup freshly scraped coconut, 2 peeled and finely diced onions, 2 de-seeded and finely slit green chilies, ¼ tsp. cumin seeds, 6-8 curry leaves, a pinch of asafoetida/hing, sugar to taste, 2 tbsp. oil, salt to taste

    Steps to make Goan Foogath Yard:

    1. Heat oil in a pan and add cumin seeds, asafoetida, green chillies, curry leaves and sauté for few seconds.

    2. Add the onions and sauté until soft and tender. Add the chopped beans, salt and stir well and cover the lid.

    3. After 2 minutes add water, mix and bring it to boil. Simmer and cook till the beans are tender.

    4. Add scraped coconut and required sugar and stir well, cover and cook for 2 minutes.

    Goan Foogath is ready. Prepare today and serve your child with rotis or as salad.
