A flavourful Green Leaf Rice Combo is a dish loaded with iron and folic acid, consisting of spinach, coriander leaves, lentils and mild spices. This is an ideal nutritious dish.

1 cup cooked rice, 1 cup chopped spinach, 1 tbsp urad dal, butter or ghee, handful of corainder leaves for garnishing, salt
1. Heat the ghee in a broad non-stick pan, add urad dal and allow it to crackle.
2. When the daal crackle, add chopped spinach and saute it for 2-3 minutes.
3. Add cooked rice and sprinkle some salt. Mix well and cook for another 2 minutes while stirring occasionally.
4. Turn off the flame and garnish the rice with coriander leaves.
The Green Leaf Rice Combo is ready to serve. You can puree the spinach as well to make the rice green.
