Guduguda Tarakari is a perfect side dish that can be served to your child for lunch. With eggplant, pumpkin, beans, and sweet potatoes as its prime ingredients, this dish is loaded with the healthiest nutrients for your kiddo.

Ingredients to make Guduguda Tarakari:
400 gm eggplant, 250 gm pumpkin, 200gm sweet potato, 250 gm beans, 250gm raw red gram, 300gm yam, 200gm raw banana, 250 gm spinach, 200gm pea, 50gm green lentil, 1 cup shredded coconut, 250ml milk, 150 gm black gram, 100gm ghee, 2tsp sugar, 2 tsp cumin seeds, salt to taste.
Steps to make Guduguda Tarakari:
1. Soak the black gram for 2 hours, then wash it properly and make a fine and thick batter out of it.
2. Add salt to taste, mix it well, and keep it aside.
3. Peel off the raw gram and bean. Cut all the vegetables into small cubes and chop the spinach into medium pieces.
4. Heat ghee in a pan and deep fry the balls made out of the batter prepared until it is crisp.
5. Heat ghee in another pan, add cumin seeds, and allow spluttering. Then add the milk and water to it.
6. Add all the vegetables and green lentil to the boiling milk. Then add shredded coconut and salt to taste to the above vegetables and stir it well. Cover the lid and cook until the vegetables become tender.
7. Then add the spinach. Boil the above mixture for 5 minutes and add the pakoras to it.
Cook for 2 minutes and serve this dish to your little one and see him enjoy.
