Gulkand Kala Jamun is a traditional Rajasthani sweet delicacy, which is made using khoya, sooji, and maida. The sweet is flavoured with gulkand, elaichi powder, and saffron and tastes super yummy. This carbohydrate-fats rich sweet is deep fried to get the dark black colour and is also perfect in your festival spreads.

1 cup khoya, 1 tbsp sooji, 3 tbsp maida, oil for deep frying, 1 pinch of baking soda, 2 tbsp gulkand, ½ tsp elaichi powder, 1 tbsp chopped cashews, 2 cups water, 1.5 cups sugar, 1 tsp rose water, 5-8 saffron strands, 1-2 edible silver foil
1. In a mixing bowl, add khoya, sooji, maida and baking powder. Gently knead the mixture to form a soft dough.
2. In a kadai, pour oil. Switch on the flame and warm the oil.
3. Make small balls from the kneaded dough and stuff the ball with little elaichi powder, gulkand and chopped nuts. Seal the stuffed ball and prepare the remaining balls in the same wary till the entire dough is used.
4. Deep fry till golden brown.
5. Prepare the sugar syrup by boiling water and sugar. While the mixture is boiling, add saffron strands, rose water, and remaining elaichi powder.
6. Add the fried balls into the prepared sugar syrup and let it rest for a few minutes till the syrup gets into the balls.
Garnish the gulkand kala jamuns with edible silver foil. Enjoy!
