Gya Thuk/Thukpa

Gya Thuk is an excellent ideal hot savor soup, which is perfect during the winters. Adding veggies into the soup will provide all the required nutrients to your kiddo which he really needs at this stage.

    Ingredients to make Gya Thuk/Thukpa:

    2 cups vegetable stock, 1 thin sliced carrot, 2 chopped tomatoes, 50 grams rice noodles, 1 tsp cumin seeds, ½ tsp grated ginger, 2 garlic cloves,1 chopped onion, 1 tbsp lemon juice, salt to taste, 1 tbsp oil, ½ cup spring onion, chopped and 2 red chilies

    Steps to make Gya Thuk/Thukpa:

    1. Boil the noodles in hot water, stirring in between. Drain the noodles through a large sieve and run cold water over them to stop them from sticking. Squeeze the water from the noodles and transfer to a serving bowl

    2. Make a smooth paste of onion, tomatoes, garlic, ginger, cumin seeds and red chilles using a blender or mixer.

    3. Take a pan and stir fry this paste in oil till rawness goes away.

    4. Add vegetable stock. Bring to boil on low heat.

    5. Add vegetables and simmer till vegetables are cooked.

    6. Add salt and lemon juice. Add boiled noodles.

    Serve hot and add finely chopped green onion leaves on top of it.
