A yummy Hawaiin Delight made out of jackfruit, coconut milk and jaggery is a must-have sweet dish. You will love this out of the box recipe. It is filled with the goodness of vitamins, minerals, iron and fibre.

5-6 pieces of riped jackfruit, 100 gm powdered jaggery, 250 ml coconut milk, 100 ml water, 1 tsp cardamom powder, 1-2 tbsp ghee, a pinch of salt, crushed cashews.
1. Prepare jaggery syrup by cooking jaggery and water over medium flame. Cook until the jaggery melts.
2. Strain the syrup into a bowl.
3. In the same pan, add jackfruit pieces, water and salt and cook for 5 minutes or until the jackfruit softens.
4. When the most of the water has evaporated, add coconut milk, and jaggery syrup to the jackfruit and start cooking.
5. Cook until it start to resemble a glossy caramel sauce. Remove the pan from heat.
6. Heat ghee in a pan and fry cashews.
Sprinkle cashews on top of the pudding and your hawaiin delight is ready to serve.
