Beetroots are healthy and they are the prime ingredient in Holi Puriyal. It provides lots of vitamins and minerals. When combined with carrots the nutritional content doubles up and become ideal side-dish for your kids and adults alike.

    Ingredients to make Holi Puriyal:

    1 beetroot grated, 2 carrots grated, grated coconut, 1 tsp urad dal, 1 tsp mustard seeds, 1 spring curry leaves, sugar, salt, oil

    Steps to make Holi Puriyal:

    1. Steam grated beetroot and carrots in a steamer or pressure cooker without whistle.

    2. Heat a tsp of oil in a pan, add mustard seeds. As the seeds splutter add urad dal and saute it till golden brown.

    3. Add curry leaves, steamed beetroot and carrots, salt, 1/2 tsp sugar and stir fry for about a minute. Check the salt level and adjust according to your taste.

    4. Finally garnish it with grated coconut and serve to your little one.

    Serve this Holi Poriyal with rice and gravy.
