Besan is high in carbohydrates and protein, contains some fat and is gluten-free. This nutrient-rich flour is a food source of many vitamins and minerals as well as dietary fiber. Due to the low glycemic index of besan, it is a great food for diabetics. Jhunka is a traditional Maharashtrian dish, which has a chickpea flour and methi base as main ingrediends. This side dish is eaten with jowar or bajra rotis. It is a very simple yet nutritious dish that can be served any time.

Methi-1 cup, besan-1 cup, water-½ cup, salt-to taste, oil-2 tsp, curry leaves-few, haldi-½ tsp and mustard seeds-½ tsp
1. Heat oil in a pan, temper mustard seeds and curry leaves.
2. Add haldi, methi and salt, and mix well, cook for a minute.
3. Add besan to it and roast for about a minute.
4. Add water a little at a time until the mixture turns into asingle lump. Stir continuously .
5. Cook covered for about a minute or two, but stir regularly.
Remove from flame. Serve hot with rotis or chapattis.
