Kairi Sambhar is a yummy tangy sambar made with mangoes. If you want a sour taste, add tamarind along with mangoes. For a sweet taste, add jaggery. Mangoes are available in plenty in summer. They are high on vitamins.

4 to 6 (small sized) raw mangoes, 1 cup cooked toovar (arhar) dal, 2 tsp sambhar powder, ½ tsp turmeric powder (haldi), 2 cups water, salt to taste, 1 tsp mustard seeds (rai/sarson), 1/4 tsp fenugreek (methi) seeds, 1/4 tsp asafoetida (hing), 1 whole dry Kashmiri red chili, a few curry leaves (kadi patta), 2 tsp oil
1. In a pan, add 2 cups of water, add the mangoes, salt and turmeric, and bring to a boil and cook till the mangoes are soft.
2. Once the mangoes are soft, add the cooked tuvar dal, sambhar powder and boil for 3-4 minutes.
3. Heat oil in another pan, add the mustard seeds, methi seeds, hing, red chilli and curry leaves and when they splutter pour it over the sambhar.
4. Sprinkle chopped fresh coriander leaves.
Serve hot with rice and ghee.
