Black eyed beans is a wholesome pulse as it’s a rich source of carbohydrates, protein, fibre, and vitamins and minerals like vitamin A, C, D, iron, calcium and magnesium. You can make a delicious and nutritious side dish, Karamani Sundal for your child using this pulse.

1 cup black eyed beans, 1 tsp channa dal, 1 tsp urad dal, 1 tsp mustard seeds, 1 dry red chilli, a pinch of hing, ½ tsp red chilli powder, 3-4 curry leaves, salt as required
1. Wash and soak the balck eyed beans overnight.
2. Pressure cook the black eyed beans for 3-4 whistles.
3. In a kadai, put oil. Once the oil is warm, add hing. Put dry red chilli, mustard seeds, urad dal, channa dal and curry leaves. Stir for a min on medium flame.
4. Once the mustard seeds crackle, put the boiled black eyed beans. Add chilli powder and salt.
Give a good mix and Karamani Sundal is ready for your child to enjoy. Serve warm.
