3 cup all purpose flour/maida, ½ cup ghee, oil for deep frying, 2.5 cup sugar, ½ cup water and 1 tbsp. rose water
1. Sieve flour in a bowl and add ghee.
2. Mix it well with your hand. Add small amount of water and knead it to make a firm dough
3. Divide the dough into 6 equal portions. Take one portion of the dough and roll it like a chapatti.
4. Now roll the chapatti into cylindrical shape and seal it with water so that it does not open up.
5. Press the cylindrical shaped chapati with the help of a rolling pin and then cut it into small cubes. Repeat this process for the rest of the dough.
6. Heat the wok with oil and deep fry it on very low flame till it turn golden and crisp from all the sides.
7. Take another wok with half cup water, add sugar in it. Let the sugar dissolve in the water completely. Add rose water in the sugar syrup. Switch off the flame.
8. Add deep fried cubes in the sugar syrup. Mix it well with spatula. Cover it for 5 minutes. Mix it again to make sure that sugar coats well evenly to all the cubes. Let the cubes cool down.
Delicious Khurmi is ready to be served as an evening snack.
