Kilanji is a dish from Lakshadweep, which can be prepared easily with minimum ingredients. It’s a mix of various flavours including coconut, eggs, and banana.

    Ingredients to make Kilanji:

    1 cup rice, 2 eggs, ½ cup water, 2 teaspoons oil, banana slices to taste, 1 teaspoon sugar, 1 cup grated coconut

    Steps to make Kilanji:

    1. Add banana slices and sugar to coconut milk to prepare the accompaniment.

    2. Grind rice with eggs and water to a fine milky mix.

    3. Apply a thin layer of oil in a pan.

    4. Pour 1/4 cup of the mix in the pan and immediately spread it equally all around the pan.

    5. Cook for 5 minutes on a low flame.

    Carefully remove the cooked layer of the mix from the pan and serve hot with the accompaniment.
