Here is an easy to prepare recipe for Kiwi Jelly. Savour the flavour of kiwis with your child on toast, pancakes, or right out of the jar. Kiwi packs in vital nutrients like vitamin K, magnesium, and phosphorus.
Contents
40 medium sized kiwi, 1 cup water, ¼ cup lemon juice, 5 cups sugar, 5 tbsp. liquid pectin, 2 drops green food coloring (optional)
1. Wash, deseed and crush kiwi. Combine kiwi with water in a saucepan and bring to boil over medium heat by stirring constantly.
2. Remove from heat and let stand for half an hour. Strain the mixture into a strainer lined with 3 layers of cheesecloth and refrigerate overnight.
3. Without disturbing the sediments at the bottom slowly ladle juice off the top to measure 5 cups.
4. Combine pectin and stir until pectin is dissolved completely. Bring mixture to a boil over high heat stirring constantly.
5. Add sugar all at once and bring back to a hard boil and remove from heat. Quickly ladle them into prepared sterilised jars. Pudding or jelly moulds and let it cool down to set.
Unmould and serve them to your child to enjoy the taste of kiwi.
