Kothimbir vadis are crunchy pakodas made using coriander leaves. Very few know that coriander leaves are a rich source of potassium, dietary fibre, protein, Vitamin A, Vitamin C, calcium, iron, Vitamin B6 and magnesium. Here’s how you can prepare these delicious and nutritious pakodas at home.

Ingredients: 1 ½ cups chopped coriander leaves, 2 cups besan, ½ tsp turmeric powder, ½ tsp chilli powder, 1 tsp. ginger chilli paste, 1 tbsp. sesame seeds, ¼ cup roasted crushed peanuts, 1 ½ cups of water, a pinch of hing, salt.
Steps:
1. Take a bowl and mix all the ingredients into a smooth, lump free batter.
2. Grease a microwave safe bowl and pour in the batter. Cook for about 3 minutes.
3. The cake should be cooked inside out and firm. Remove from the microwave and set aside for cooling.
4. Cut into small cubes and serve with green chutney or tomato ketchup.
