Kwati

Kwati, a traditional Nepalese bean soup is high in protein and is considered good to be given to kids. It can be eaten with rice, beaten rice, or taken as whole in snacks.

    Ingredients to make Kwati:

    2 cups dry mixed beans (kidney beans, black eyed beans, chickpeas, soya beans, moong beans, green beans, black beans, white beans), 2 tbsp mustard oil, 1 tsp red chili powder, 1 tsp turmeric powder, 1 tsp coriander powder, 4 tomatoes, 1 tsp ginger paste, 3-4 garlic cloves, 1 onion, 1 tsp ajwain seeds, 1 tsp black mustard seeds, 1 tsp cumin seeds, 1 tsp fennel seeds, salt to taste

    Steps to make Kwati:

    1. Wash and soak all the beans overnight. Boil them next morning.

    2. Heat oil and temper cumin seeds, black mustard seeds, fennel seeds, ajwain seeds, and ginger-onion-garlic paste.

    3. Add the boiled mixed beans, cumin powder, chili powder, turmeric, coriander powder and salt and mix well and fry till beans coated completely.

    4. Add the chopped tomatoes and cook for another 2-3 minutes.

    5. Adjust consistency. Bring to boil.

    Garnish with chopped green onion and serve hot with rice.
