    Ingredients to make Labanga Latika:

1 cup refined wheat flour, 2 tbsp. desi ghee, pinch of baking soda, a pinch of salt, 5-6 cloves, ¼ cup mawa, 1 tsp green cardamom powder, 3 tbsp. sugar powder, 1 cup sugar and ½ cup water

    Steps to make Labanga Latika:

    1. Take 2 cups of flour and put ¼ cup of hot oil into it. Mix it well. Once it gets cooled and then knead into a firm dough using a little water. Keep it covered for about 30 minutes.

    2. Now make small preferably lemon-sized balls of the dough.

    3. In a bowl, mix the mawa, elaichi powder and sugar powder. Keep gently stirring it for about 5 to 6 minutes. Cool and divide the stuffing into equal portions.

    4. To prepare the sugar syrup, take the sugar along with some water in a pan and keep heating on medium heat till it gets to medium-thick consistency. Take it off the flame and keep aside.

    5. Now take 1 dough ball, roll out into a medium size poori and put the stuffing in the centre of the ball. Prepare rest of the balls with the stuffing.

    6. Take 2 ends of the poori and overlap them ove-r each other and use a little oil to close it properly.. Turn them on the other side and make the other 2 ends overlap as well. It should come to form a cylindrical shape. Use 1 clove to fasten it properly.

    7. Heat up ghee and fry these on medium heat until they are golden brown in color.

    8. Put them in sugar syrup after draining excess oil and take it out when the next set of fried latikas is ready (after a short time).

Relish them when they are cold. Spread the joy.
