Light and Fluffy Panpolay

Panpolay, originally from Karnataka, is made with rice and grated coconut. While rice provides energy, it is rich in Vitamin B1 and improves the immune system; coconut is excellent for a healthy heart, provides dietary fibre and improves digestion. So prepare Panpolay to start the day in a healthy way.

    Ingredients:One cup of raw rice, 2 tablespoons of cooked rice, 2 tablespoons of grated coconut, salt to taste and oil to grease the cooking utensil.

    Steps:

    1. Soak the raw rice and cooked rice overnight. The next morning add grated coconut to the mixture and prepare a smooth batter in a mixer.

    2. Add salt to the batter and set it aside.

    3. Take a kadhai and grease it slightly with oil. Pour in the batter with a round ladle and tilt the vessel so that the batter flows and covers the surface well. Cover and cook for a minute.

    4. Take it out as soon as you see the dosa edges turning golden and leaving the surface of the kadhai.

    Once the dosa cools, give it a double fold. Serve with chutney. Want to try this ahead? Go ahead then!
