Malabar Spinach Stir Fry is a healthy and tasty side dish that you can prepare for dinner. It is very nutritious with all vitamins, iron, and calcium. Your kiddo would love it!

1 big bunch of Malabar spinach leaves and tender stems, 7-8 garlic cloves smashed, salt to taste, 2-3 tablespoons of oil, 2-3 dried red chiles, ½ cup of grated coconut
1. Rinse the spinach well.
2. Chop the leaves. Check if the stem is tender, if it is, cut them, otherwise you can discard.
3. In a cooker, add 2 tablespoons of oil and fry the red chiles and smashed garlic.
4. Once the garlic is brown, add the spinach, salt, and coconut.
5. Close the cooker and cook for one whistle.
After pressure releases, open the cooker, mix well, and check taste for salt. Add more if needed. Serve hot.
