1/4 cup chopped French beans, 1/4 cup cubed carrots, 1/4 cup cauliflower florets, 1/4 cup cubed potatoes, 1½ tbsp oil, ½ cup chopped onions, ½ cup chopped tomatoes, salt to taste
For the Paste:
½ cup grated coconut, 4 curry leaves, 1 tbsp roughly chopped garlic, 1 stick cinnamon, 1 clove
1. For the paste, dry roast all the ingredients on a medium flame for 4 minutes. Cool and blend with ½ cup of water. Keep aside.
2. Heat oil, add the onions and sauté for 2 minutes. Add tomatoes and cook on a medium flame for 2 minutes.
3. Add all the vegetables and sauté for 3-4 minutes.
4. Add 1 cup of water and salt, mix well and cover with a lid and cook on medium heat for 10 minutes, stirring occasionally.
5. Add the prepared paste and ¼ cup of water, mix well, and cook on medium heat for 3 minutes, stirring occasionally. Serve hot.
