Mangal Kangtak

Mangal Kangtak is a delicious flavourful green peas curry from the north east. It’s high on proteins and can be prepared quickly. You can pair it with chappathi or rice for your kid’s lunch.

    Ingredients to make Mangal Kangtak:

    3 cups green peas, 2 dry red chiles, 1 teaspoon turmeric powder, salt to taste, 1 tablespoon oil, 1 teaspoon chopped ginger, 5 onion leaves or chives chopped, 2 medium sized tomatoes, 1 teaspoon coriander powder, ½ teaspoon fenugreek/methi powder, ½ teaspoon cumin powder, coriander leaves to garnish

    Steps to prepare Mangal Kangtak:

    1. Place green peas in pressure cooker and cook with 2 cups water for 3 whistles.

    2. Once cooked and cooled, open the cooker and add in the turmeric powder and red chiles.

    3. Cover lightly and cook on low flame for 10 minutes.

    4. Heat oil in a pan. Add the chopped ginger, stir for a while. Add the onion leaves, tomatoes, and spice powders.

    5. Cook over medium heat till tomatoes become mushy.

    6. Add the cooked peas along with the water used for cooking.

    7. Cook for 2 to 3 minutes.

    Garnish with coriander leaves and serve.
