Are you interested in giving a twist to your usual curry with mangoes? Then here is an amazing recipe to delight your child and family with Kerala’s popular curry. Mangoes are a super good source of vitamins C and E.

1 cup semi ripe mango pieces, 1 cup thin coconut milk, 1 cup thick coconut milk, 2 dry red chillies, 1 tbsp. garlic and ginger paste, 1 tsp. black peppercorns, 2 tsp. coriander seed powder, ½ tsp. cumin seeds, ½ tsp. turmeric powder, ½ cup sliced shallots onion, 1 tomato cubed, 1 green chilli, 6-7 curry leaves, 2 tsp. coconut oil, salt to taste, and water as required
1. Heat oil in a pan and add black peppercorns, shallots sauté for 2 minutes and add garlic, ginger paste and sauté until the raw smell fades away. Add three curry leaves, tomatoes, salt and mango pieces and close the lid and simmer for 2 minutes.
2. Add turmeric, coriander powder, and thin coconut milk and mix well and cover and simmer till the mangoes are cooked.
3. Add thick coconut milk and simmer on low flame for 3 minutes stirring occasionally
4. Heat oil in a tempering pan splutter cumin seeds, red chillies and remaining curry leaves and pour the tempering over the curry.
Your child will just enjoy Mango Coconut Curry with a bowl of rice.
