Mango Kofta Pulao

    Ingredients to make Mango Kofta Pulao:

    1 cup paneer, 1 cup ripe mangoes, 1 tsp.corn flour, 1 tsp. cardamom powder, 10-15 cashews, 2 tsp. gram flour(besan), Salt to taste, 4 tsp. oil, ½ tsp. cumin seeds, spring of curry leaves, 2 bay leaves, 1 inch cinnamon sticks, 2-3 cloves,1 tbsp. ginger paste, 2 green chilli slit lengthwise. 1 cup boiled basmati rice, 1 tbsp. chopped coriander leaves, 1 tsp.ghee, 1 tsp.rose water, 1 tsp. kewra essence

    Steps to make Mango Kofta Pulao:

    For the Koftas:

    1. Add chopped ripe mango, corn flour, ½ tsp. of besan, cardamom, cashews, grated paneer, and mix them all together and make round balls.

    2. Combine remaining besan, salt and cornflour and mix water to make a thick consistency batter without lumps.

    3. Dip the round balls in the batter and deep fry on a medium flame till they turn golden brown. Drain them on a tissue and keep aside.

    For the Pulao:

    1. Heat ghee and oil in a large pan and add bay leaves, cinnamon sticks, cloves, cumin seeds, curry leaves and sauté for 2 minutes

    2. Add ginger garlic paste and sauté till the raw smell fades away. Add green chillies and stir. Add the boiled basmati rice and ½ tbsp. coriander leaves and sauté for few minutes. Sprinkle the rose water and kewra essence and close the lid and simmer for 3 minutes.

    3. Add the kofta on top and garnish with coriander leaves.

    Serve hot to savour the Mango Kofta with pulao.
