Masala Akki Roti

The Masala Akki Roti Recipe is a delicious spicy flat bread from Karnataka that is made from rice flour. It is a healthy and tasty meal for the breakfast as well as snacks. It is enriched with the goodness of rice flour rich in carbohydrate and shepu is a good source of calcium, manganese and iron, and as an antioxidant food, its flavonoids provide anti-inflammatory and antiviral properties that give it a whole host of incredible health benefits.

    Ingredients to make Masala Akki Roti:

    Rice flour-1 cup, coriander powder-1/4 tsb, water-½ cup, cumin powder-1/4 cup, oil-2 tsp, green chillies-1-2 small, shepu-1/4 cup and salt-to taste

    Steps to make Masala Akki Roti:

    1. Finely chop the green chilies, in a large mixing bowl, a dd 4-5 tablespoons of warm water, salt, coriander powder, cumin powder and leave for 5-8 mins.

    2. Meanwhile sift the flour twice over. With very little water, grind shepu and chilies to a coarse paste.

    3. Add this paste to the cumin water in the bowl. Mix well, add the rice flour a little at a time and make a smooth dough. Add little warm water if required.

    4. Add a layer of oil over the akki roti dough and keep aside. Cover and allow it to rest for 10-15 minutes.

    5. Wet a muslin cloth with water or grease a plantain leaf. Pat a large spoonful portion of the dough on the cloth or leaf to make circular discs as you would do for a roti.

    6. Make a small hole in the center for even cooking of the akki roti.

    7. Preheat a skillet over medium heat and grease the skillet.

    8. Carefully invert the akki roti onto the skillet and peel out the cloth or the leaf.

    9. Cook the Masala Akki Roti on medium to low heat. Drizzle a teaspoon of oil around the roti and cook it on both sides until brown spots appear.

    Once done, remove from heat and serve warm along with coconut chutney and ghee for breakfast or an evening tea time snack along with a hot cup of filter coffee or tea.
