Matar Toast is a tasty sandwich made with peas and paneer. It’s flavourful and healthy and easy to make for breakfast if you have the boiled peas ready. The dish is loaded with essential vitamins and proteins.

1 tablespoon butter, 1 onion finely chopped, ½ cup green peas, 3 tablespoons coriander leaves chopped, 1 teaspoon chaat, masala powder, 1 cup grated paneer, salt to taste, 10 to 12 slices of bread (whole wheat), olive oil
1. Heat butter or oil in a pan.
2. Then add the finely chopped onions.
3. Saute till the onions becomes translucent.
4. Sprinkle salt and stir again.
5. Now add the ½ cup of boiled green peas. Stir well.
6. Add 3 tablespoons chopped coriander leaves.
7. Stir and cook for another 2 to 3 mins on a low flame.
8. Add grated paneer.
9. Sprinkle chaat masala.
10. Cook for another 1 to 2 minutes on a low flame.
11. Switch off the flame and allow the mixture to cool down, otherwise the toast sandwich would get soggy.
In case you would want to convert this into a sandwich, here are the steps:
1. Slice the edges of the bread, this step is optional.
2. Spread the paneer-matar filling on the bread slices.
3. Top with another bread. repeat the same with other bread slices.
4. Place in a preheated toaster or grill. You can also toast these sandwiches in a hand held stove top toaster.
5. Toast the sandwiches till crisp and golden.
Slice the paneer toast and serve them hot with green chutney or tomato ketchup.
