Mexican Chaat comes with the goodness of rajma, which is a rich source of protein and fibers, cheese, which provides good fat and capsicum containing, which has a reputation for relieving certain kinds of pain. Along with all these it also has an eclectic mix of herb and spices in it, which makes it more healthier and tasty. Here is the way to make healthy Mexican Chaat at home.

Rajma-1 cup, cheese-½ cup, cumin seeds-½ tbsp, green cardamoms-2, capsicum-1/4 cup, coriander leaves-few, lemon juice-1 tbs, water-2 cups, salt-to taste, and oil-1 tsp
1. Wash and soak rajma overnight.
2. Pressure cook rajma till 1 whistle at medium flame with 2 cups of water and pinch of salt.
3. Wash and cut the capsicum.
4. Heat oil in a pan and add cumin seeds. Let it splutter and then add capsicum. Fry for 5 minutes and then add rajma, green cardamoms, salt and grated cheese. Mix well.
5. After 2 minutes add 1 tablespoon lemon juice. Cook for 1 minute and turn off the flame.
Garnish with minced coriander leaves and serve.
