Is your little munchkin bugging you to cook something new and different for her lunch? Make her this tasty Mexican Rice Wave full of vegetables, packed with vital vitamins and minerals such as Vitamin A, Vitamin B6, iron and carbohydrates.

2½ cups cooked rice, 2 tbsp oil, ½ cup finely chopped onions, 1 tsp garlic paste, ½ cup chopped and boiled mixed vegetables, salt to taste
1. Heat oil, add onions and sauté on medium heat for 2 to 3 minutes till they turn translucent.
2. Add the garlic paste and sauté. Add the mixed vegetables and sauté for 1 more minute
3. Add the rice and salt, toss well and cook on a medium flame for 4-5 minutes. Serve hot.
