A crisp snack bursting with a flavour of ajwain and kalonji, Nimki is perfect to serve along with milk. Wheat flour makes these Nimkis crispy, flaky, and healthy.

Contents
1 cup wheat flour, cup white flour, 2 tbsp ajwain seeds, 2 tbsp nigella seeds (kalonji), 3 tbsp ghee, salt to taste, oil for frying
1. Take a deep bowl; add wheat flour, white flour, salt and mix well.
2. Add ajwain and nigella seeds in the flour and mix well.
3. Add ghee and knead a firm dough by adding little water at a time.
4. Take medium sized balls from the dough and roll them through rolling pin.
5. With knife, cut the rolled dough in medium sized thin strips
6. Heat oil in a skillet and deep fry the thin strips.
7. Drain the nimkis on paper napkins to remove excess oil.
Store in an airtight container once they cool down. Serve it along with green chutney.
