Paanch Phoran Tarkari is very easy, simple, and quick to prepare dish. Your child will savour this side dish as it is without main course. Brinjal is rich in calcium, iron, and magnesium.

1 cup diced pumpkin, 1 cup cubed potatoes, 1 cup diced brinjal, 2 bay leaves, 2 dried red chillies, 1 tsp. chopped green chillies, ½ tsp. fenugreek seeds, ½ tsp. aniseeds, ½ tsp. mustard seeds,½ tsp. cumin seeds, ½ tsp. fennel seeds (panch phoron seeds), ¼ tsp. turmeric power, 1 tsp. cold Milk, 2 tbsp. mustard oil, ½ tsp. sugar, salt to taste
1. Heat oil in the pan and add the bay leaves and the panch phoron seeds and sauté for 2 minutes and add in the chiles.
2. When the panch phoron seeds are aromatic, add in the veggies, salt, sugar, turmeric and mix well. Pour ½ cup water and milk, stir, and cook covering the lid until the veggies are well cooked.
Serve to your child yummy Paanch Phoran Taarkari with rice or rotis.
