You can prepare a lip smacking Palanga Besara, a spicy vegetable dish cooked in mustard gravy for your child. Many veggies are used in this recipe like spinach, which is rich in iron, potato that has carbohydrates and brinjal, which has vitamin K, C, potassium, and fibre.

½ cup palaga saga (spinach), 1 potato, 1 brinjal, 1 onion, 1 green chili, 2 tsp mustard seeds, 1 tsp cumin seeds, 2-3 garlic cloves, ½ tsp turmeric powder, 5- 10 badi, salt as per taste, 3 tsp refined oil
1. Make a paste of mustard seeds, jeera, garlic cloves.
2. In a kadai, add oil. Add the badis and fry for 2-3 minutes.
3. Remove the badis. In the same kadai, add oil. Add the mustard seeds. Once it splutters, add the onion and green chilies.
4. Add cubes of potato and brinjal. Saute for 2-3 minutes.
5. Add the ground mustard paste and let the veggies cook well.
6. Add the cut spinach and cook for another 3-4 minutes.
7. Add the badis, turmeric powder, and salt.
8. Cover and cook for another 5 minutes.
Delicious and hot Palanga Besara is ready. Serve with rice or phulkas. Enjoy!
