You can prepare this quick jelly within minutes with simple and handy ingredients. The pandan leaves have a sweet unique flavour which will be instantly relished. These leaves are used to reduce the symptoms of pain and fever and also used as a laxative.

2 cups water, tsp. agar-agar powder, 7 tbsp. cane sugar, ½ cup pandan juice, ½ cup coconut milk, a pinch of sea salt
1. Rinse 8 Pandan leaves well and cut into 2 cm length.
2. Blend the leaves with water. Strain the pandan juice to get ½ cup of it.
Steps to make Pandan Jelly:
1. In a saucepan mix water, pandan juice, agar-agar powder, cane sugar, coconut milk, and sea salt. Whisk until all the agar-agar powder dissolves.
2. Bring the mixture to rolling boil and reduce the heat and simmer until the cane sugar completely dissolves.
3. Switch off the flame and pour the mixture into jelly mould or glass shallow dish.
4. Let it cool down before chilling in the fridge.
5. Cut into your child’s desired shapes.
