Pani tenga is a unique, fermented chutney from Assam made with mustard and blend of spices. It is a perfect side-dish to be served along with main course.
Contents
100 gm mustard seeds, ½ cup lemon juice, 1 banana leaf, 1 tsp red chilli powder, salt to taste, a pinch of sugar
1. Wash the mustard seeds and let them dry completely.
2. Grind the dried seeds. Grind them coarsely.
3. Add lemon juice, red chilli powder, salt and sugar and knead a dough.
4. Wrap this dough in banana leaf and keep it in container for 3-4 days for fermentation.
5. After 3-4 days Pani tenga is ready to eat.
Serve it along with main course or snacks.
