Papad ki Sabzi is a delicious recipe from Rajasthan, which can be prepared quickly by simply roasting the papads and sauteing them in gravy made of curd. Urad dal is rich in protein, fat, carbohydrates, iron, folic acid, calcium, magnesium, and potassium.

4 tsp oil, ½ tsp mustard/rai, ½ tsp cumin, a pinch of hing, few curry leaves, 1 finely chopped onion, 1 tsp ginger-garlic paste,½ tsp turmeric / haldi,1 tsp kashmir red chilli powder, ½ tsp coriander powder, 1 cup water, 1 cup whisked curd, 4 papad urad/lijjat, ¼ tsp salt, ½ tsp garam masala(optional), 1 tsp kasuri methi, and 2 tbsp finely chopped coriander
1. Take a kadai and heat 4 tsp oil and add ½ tsp mustard, ½ tsp jeera, pinch hing and few curry leaves. Let it splutter.
2. Then add 1 chopped onion and saute well. Add 1 tsp ginger garlic paste. Saute it for a minute.
3. Add spices like turmeric, chilli powder and coriander powder. Sauté on low flame for a minute.
4. Now add 1 cup water and whisked curd by stirring continuously on low flame till the curd combines well.
5. Now break the roasted papad into curry. Mix it well.
6. Finally add salt and let it simmer for 2 minutes.
7. Add garam masala, kasuri methi and coriander. Mix it well.
Enjoy this tempting sabzi with chapatti/ missi roti/rice.
