A mixed vegetable curry, Pariba Ghanta, having variety of veggies cooked in a delicious onion tomato gravy flavoured with powdered spices, is an amazing side dish that goes well with phulkas or rice. The dish is rich in carotene, protein, carbohydrates and calcium.
Contents
1 cauliflower, 2 carrots, 1 turnip, ¼ cup green peas, 3 potatos, 2 tomatoes, 2 onions, 5 garlic cloves, ¼ piece of ginger, 2 tbsp cumin, 2 tbsp melon seeds or cashews, 1 tbsp chilli powder, 3 tsp refine oil, salt as per taste, puncha putana (½ tsp cumin seeds, 1 tsp mustard seeds, ¼ tsp fenugreek seeds, ½ tsp black cumin), 4-5 sprigs of coriander leaves
1. Finely chop all the veggies.
2. Finely chop the onions too.
3. Crush the garlic and giner gloves.
4. In a blender, add cashews or melon seeds and cumin. Blend to a smooth paste.
5. In a pan, heat oil and add all the veggies. Cook till they are half done. Remove and keep aside.
6. In the same pan, again put oil and add the puncha putana. Once the mustard seeds splutter, add the finely chopped onions and fry till golden brown.
7. Add the crushed garlic and ginger. Saute for 2-3 minutes.
8. Add the fried veggies and give a good mix.
9. Add the cashew or melon seed paste. Cover and cook for about 5 minutes till the veggies are well cooked.
Hot and tasty pariba ghanta is ready to be relished by your child with phulkas or rice.
