Paruppu Usili

It is a dry dish that is very nutritious due to high amount of vegetables added to it. It goes well with roti or appam and is very light on the stomach.

    Ingredients to make Paruppu Usili:

    1/4 cup toovar (arhar) dal, 6-7 whole dry kashmiri red chilli, 1 tsp asafoetida, salt to taste, 2 cups french beans, ½ tsp turmeric powder, 1 tbsp coconut oil, 1 tsp mustard seeds, 2 tsp urad dal, 1 tbsp fresh grated coconut, 6-7 curry leaves

    Steps to make Paruppu Usili:

    1. Clean, wash, and soak the toovar dal in water for 10-15 minutes. Drain and keep aside.

    2. Add red chiles, hing, salt, and 2 tbsp of water and blend in a mixer to a medium paste that is neither too fine nor too thick.

    3. Take French beans, salt and 1 cup of water and place in a pan. Cover and cook on medium flame till done. Drain excess water and keep aside.

    4. Heat oil in kadai and add mustard seeds. Now add urad dal and saute for few seconds.

    5. Add the paste and 1 cup of water and mix well. Let it cook for 1 minute on medium flame.

    6. Now add french beans and coconut, mix gently and cook on low flame.

    Serve hot with roti or parantha.
