Parwal ki Meethai is a delicious sweet made using parwal and paneer! Cardamom, saffron, almonds and pistachios add to the taste and flavour.

250 gm parwal, 1 tsp baking soda, 1 cup cottage cheese, 2 tbsp finely chopped almonds and pistachios, 1 tsp cardamom powder, 2 tbsp diced sugar(mishri), 1 cup sugar, 2 cup water
1. Wash and peel parwals. Slit them lengthwise, discard the seeds, keep intact.
2. Boil parwals. Add a pinch of baking soda while boiling.
3. Remove and gently squeeze out the water.
4. Prepare sugar syrup with sugar and water. Add saffron in sugar syrup. Dip parwals in sugar syrup.
5. Prepare stuffing with cottage cheese. Mash it properly. Add almonds, pistachios, diced sugar, and cardamom powder.
6. Take out the parwals from sugar syrup and fill them with prepared stuffing.
Garnish them with chopped nuts and saffron strands. Chill and serve.
