Peanut Poha Patties, a healthy snack to be served along with mint dip is crispy and crunchy and delicous too. It is rich in iron and vitamin E.

1 cup roasted peanut, 1 cup thick poha, 2 tbsp corn flour, 1 onion, 1 tsp ginger, 1 tsp red chili powder, ½ tsp cumin powder, mint leaves, handful of coriander leaves, 2 tbsp oil, salt as per taste
1. Wash and soak poha for 10-15 minutes.
2. Now grind the roasted peanuts into a coarse powder. Keep it aside.
3. Now coarsely grind the soaked poha as well. Add the poha powder to peanuts powder.
4. Add chopped onion, mint leaves, ginger and coriander leaves in to the peanut poha mixture.
5. Add corn flour, red chilli powder, cumin powder and salt. Sprinkle little water and mix everything well and make a thick dough.
6. Grease your palm andmake small balls out of dough. Flatten them with hand to make pattie.
7. Heat a tawa and cook all the patties on medium flame. Apply oil on both sides. Fry till crispy and golden brown.
Relish the patties with a dip of your choice.
