Does your child refuse to eat plain rice? Spice it up for him using this easy recipe. This dish is made using peanuts, which are a rich source of copper, manganese, Vitamin B3, molybdenum, folate, biotin, phosphorus, Vitamin E, protein and Vitamin B1. Hence, this dish is as nutritious as it is delicious.

Ingredients: 1 ½ cups rice, ¼ cup peanuts, 1 ½ tbsp. chana dal, 1 tbsp. urad dal, 1 garlic clove, 2-3 sprigs curry leaves, 2-3 red chillies, ½ tsp cumin powder, 1 tbsp. grated coconut, 2 tbsp. oil.
Steps:
1. Soak the rice for some time and cook it. Spread it on a plate for cooling.
2. Dry roast the dals till they turn golden and then remove from the pan. In the same pan, roast the peanuts, garlic clove, curry leaves, cumin powder and red chillies.
3. Shift the dals and the roasted peanuts and grind them into a coarse powder.
4. Heat oil in pan, splutter the mustard seeds and add one red chilli and hing. Add the ground powder and the rice. Mix well.
You can cook peanut rice at home for your little one today and surprise him. Serve with raita or vegetable curry!
