Here’s an interesting recipe that allows you to use pineapples in a unique way. While you must have used them to make juices, salads, parfaits, etc., you can now use pineapples to make fried rice. Pineapples are rich in folate, Vitamin B6, thiamine, beta carotene, Vitamin C, magnesium, calcium, manganese, copper and potassium.

Ingredients: ½ cup rice, 1 tbsp. butter, ½ tbsp. chopped garlic, 8-10 split cashews, raisins, ½ cup spring onions and capsicums chopped, 1 green chilli slit, ¼ tsp. curry powder, 1 tsp vinegar, salt, 1 cup chopped pineapples, 1 tbsp. fresh coriander leaves, oil.
Steps:
`1. Cook the rice till it is just done. Set aside.
2. Heat oil in a pan and roast the cashews and raisins. Fry garlic and then add the chopped spring onions, capsicum and spring onions.
3. Add vinegar, salt and curry powder and mix well. Next add the chopped pineapples and sauté for 2 minutes.
4. Add rice and a little oil and cook for 2-3 minutes.
