Ingredients to make Pineapple Phirni:
Pineapple-½ cup, sugar-1/4 cup, coconut milk-3 cups, and rice-1 cup
Steps to make Pineapple Phirni:
1. Place peeled and chopped pineapple in a blender. Process until smooth. Set aside.
2. Pour coconut milk in a saucepan and let it come to a gentle boil.
3. Now add the soaked rice flour. Stir constantly with a whisk to prevent any lumps formation.
4. Now add pineapple puree and sugar. Stir and cook on low heat for 5 minutes or until it thickens.
5. Garnish with pineapple slices.
Place in the refrigerator for 2 hours or until chilled. Delicious Pineapple Phirni is ready to serve.
