Pink Rice

A yummy and nutritious rice preparation can be made using beetroot, potato and peas. Beetroot is an excellent source of vitamin C, iron and dietary fibre. Potato and rice provide valuable carbohydrates while peas provide the vital vitamin and minerals.

    Pink rice for your baby tastes awesome when flavoured with lemon juice, coriander leaves and mint leaves and is an ideal dish for your baby aged 8 months and above.

    Ingredients to make Pink Rice for your baby:

    1 cup basmati rice, 1 potato, ½ beetroot, ¼ cup peas, 1 tsp lemon juice, ¼ tsp turmeric, 5-6 sprigs of coriander leaves(leave ¼ tsp for garnish) , 3-4 sprigs of mint leaves, 1 tsp oil, salt as required, 3 cups of water

    Steps to make Pink Rice for your baby:

    1. Wash the basmati rice and soak for 20 minutes. Drain the water and set aside.

    2. In a pressure pan, add cubes of potato, beetroot and peas and 1 cup water. Cook the veggies for 3-4 whistles.

    3. Once the pressure is cooled down, puree the veggies.

    4. In a kadai, put 1 tsp oil. Add the finely chopped coriander and mint leaves. Add turmeric powder. Saute on medium flame for 2 minutes.

    5. Add 2 cups of water. Once the water comes to a boil, add salt. Add the soaked rice and cook the rice till tender.

    6. Allow the rice to cool. Add the veggie puree and lemon juice to the cooled rice.

    7. Mix well till the rice is coated well with the veggie mixture.

    8. Garnish the pink rice for your baby with finely chopped coriander leaves.

    The yummy rice dish is perfect for lunch/dinner mealtime.
