A wonderful and tasty high iron -protein content snack is Pithore. This snack is made using Bengal gram flour and fenugreek leaves flavoured with spice powders.

    Ingredients to make Pithore:

    1 cup Bengal gram flour, ½ cup fenugreek leaves, 1 cup thick butter milk, ½ tsp chilli powder, ½ tsp turmeric powder, 2 tsp ginger paste, 1 tsp green chilli paste, salt to taste, 2 tsp oil, 1 tsp sesame seeds, ½ tsp cumin seeds, a pinch of asafoetida, 5-10 sprigs of coriander leaves

    Steps to make Pithore:

    1. In a mixing bowl, add Bengal gram flour, chopped fenugreek leaves, butter milk, chili powder, turmeric powder, ginger paste, green chili paste, and salt. Mix well to make a batter of pouring consistency.

    2. Grease a thali(plate).

    3. In a non-stick pan, put one tsp oil. Add the batter and cook on low flame, stirring continuously. The moment it starts leaving the sides of the pan, pour the mixture into the greased thali. Spread the mixture evenly.

    4. Cut into square/diamond shape.

    5. In a small pan, put 1 tsp oil. Once the oil is warm, put the cumin seeds. As it turns light brown, add the sesame seeds and asafoetida.

    Saute for half a minute. The dish is ready!
