This is a great change for your kid for their lunch time as this is made from besan and in yogurt gravy that gives it a yummy flavor. Your kid can’t resist it for sure.

    Ingredients to make Pitor Ki Sabzi:

    For the Besan Dumplings:

    2 cups chickpea flour/besan, ¼ cup curd, 1 tbs oil, 1/4 tsp hing, ½ tsp cumin seeds, salt as per taste, ½ tsp red chili powder, ½ tsp fennel seeds, 2 cups water and oil for frying

    For the Gravy:

    4 tbsp oil, 3-4 dry red chiles, 1 cup finely chopped onion, 1 tsp ginger paste, 1 tsp garlic paste, 1½ cup curd, 1 tbs maida, 2 tsp coriander powder, ½ tsp turmeric powder, 2 tsp red chilli powder, ½ tsp garam masala, salt as per taste, 1 tbsp lemon juice, chopped coriander

    Steps to make Pitor Ki Sabzi:

    For the Besan Dumplings:

    1. Take a bowl and add besan, curd, oil, hing, cumin, salt, fennel seeds and red chilli powder.

    2. Add water little by little and make a lump free batter. Mix it well.

    3. Take a non-stick pan and heat it. Now pour this batter in a pan and cook it from both sides for 3-4 minutes.

    4. Keep stirring continuously and then transfer this cooked mixture into a greased plate.

    5. Once it is cooled, cut this mixture into small squares.

    6. Now heat up the oil in the pan and fry these dumplings till golden brown.

    7. Remove them from oil and let them cool down.

    For the Gravy:

    1. Heat oil in a pan and add dry red chilies and fry them for 20 seconds.

    2. Add onion and fry it till it turns golden brown. Remove from oil and keep aside.

    3. Now fry ginger garlic paste slightly.

    4. In a bowl, mix curd, maida, coriander powder, turmeric powder, red chili powder, and grama masala powder.

    5. Add this mixture into the pan and add a cup of water to it. Bring this mixture to a boil and then lower down the flame.

    6. Cook for atleast 5-6 minutes till oil separates.

    7. Add lemon juice to this mixture and give a nice stir.

    8. Add besan dumplings to the curry and give it a good mix till it gets covered into the curry completely.

    Garnish it with fresh coriander and serve hot with chapati or paratha.
