1½ tbsp coconut oil, 1¼ cups chopped onions, 1½ cups chopped potatoes, salt to taste, ¼ cup tamarind water, 2 tbsp finely chopped coriander
1. Heat oil, add onions and sauté till translucent.
2. Add the potatoes, 1½ cups of water and salt. Cover and cook on medium heat till they are cooked, stirring occasionally.
3. Add the tamarind water, mix well and simmer for another 5-7 minutes. Garnish with coriander and serve immediately.
