Easy to make and healthy dish recipe is here for you. Extremely high in fiber and low in calories, pumpkin includes potassium, magnesium, and vitamins C and E. Chawali is rich in fiber, protein, iron, potassium, low in fat, and calories.

1 cup red pumpkin cubes, 1½ cups soaked and cooked chawli, ½ tsp cumin seeds, 2 whole dry Kashmiri red chiles, 1/4 cup roughly chopped onions, 1 tbsp roughly chopped garlic, 1/4 tsp turmeric powder, salt to taste, 1 tsp oil, ½ tsp mustard seeds, 5-7 curry leaves.
1. Blend cumin seeds, red chillies, onions and garlic in a mixer till smooth. Keep aside.
2. Take a non-stick deep bottomed pan and add chawli, pumpkin, salt and 1 cup of water. Mix well and cover it with a lid.
3. Cook on a medium flame for 8 to 10 minutes. Stir it in between.
4. Add the already prepared masala along with turmeric powder and cook for 2-3 mins on medium flame. Keep aside.
5. Take a small non-stick pan and heat oil in it. Add mustard seeds and curry leaves, let them splutter.
6. Then pour it over the prepared chawli and pumpkin vegetable and mix well.
Serve hot with rice. Enjoy!
