To be Ground into a Paste:
3/4 cup grated coconut, 1 tsp cumin seeds, 1/4 cup of water
Other Ingredients:
2½ cups chopped red pumpkin, 1/4 cup yellow moong dal, salt to taste, 1 oil, 1 tsp mustard seeds, 2 tsp urad dal
1. Combine the pumpkin, moong dal, 2 cups of water and salt, cover and cook on a medium flame till cooked, for approx. 10-12 minutes.
2. Add the prepared paste and simmer for 5-7 minutes.
3. For the tempering, heat the oil, add the mustard seeds and urad dal and sauté on a medium flame for a few seconds.
4. Pour the tempering over the curry and mix well. Serve hot.
