Quick CHICKEN ALOO Pulao

    Ingredients to make Quick CHICKEN ALOO Pulao:

    2 chicken breasts cut into small bites, 5 baby potatoes, salt to taste, 1 cup basmati rice, 1 tsp. oil, 1 tbsp. ghee,1 bay leaf, 1 big onion sliced, 1 tsp. ginger garlic paste, 1 clove, 1 inch cinnamon, 2 cardamoms, 3 black pepper corns, 1 tsp. cumin seeds, 2 tbsp. yogurt,1 green chilli slit, 1 tbsp. chopped coriander leaves and mint leaves.

    Steps to make Quick CHICKEN ALOO Pulao:

    1.Take 1 cup basmati rice soaked for 15-20 minutes and drained.

    2. Heat ghee and oil in a thick bottomed pan. Add bay leaf, clove, cardamoms, cinnamon, peppercorns and cumin seeds and sauté till good aroma comes from the spices.

    3. Add onions, green chilli, ½ tsp. coriander and mint leaves and sauté for 2 minutes and add ginger garlic paste and sauté till the raw smell goes and add yogurt. Sauté for few minutes, add baby potatoes, and cook for few minutes covering the lid.

    4. Add chicken and sauté for 3 minutes and cover the lid and cook.

    5. Add rice and sauté in low medium flame for 3 minutes and add 2 cups water. Sauté and cover and cook for 10 minutes or till the rice is cooked.

    6. Garnish with the remaining coriander and mint leaves.

    Serve fresh to your champ with cucumber raita for today’s lunch.
