2 cups peeled red pumpkin cubes(bhopla / kaddu), ½ cup soaked and chopped soya chunks, 2 tsp. oil, 1 tsp. mustard seeds, ½ tsp. fenugreek (methi) seeds, 1 tsp. nigella seeds (kalonji), 2 small bayleaves (tejpatta), 1 inch stick cinnamon (dalchini), 2 laung/lavang, 2 cardamoms, ¼ tsp. asafoetida (hing), ½ cup tomatoes, 1 tsp. chilli powder, ¼ tsp. turmeric powder, 2 tsp. coriander cumin seeds powder, salt to taste, ½ tsp. sugar, 1 tsp. lemon juice.
1. Heat oil in medium pan and add the mustard seeds and when it crackles, add fenugreek seeds, nigella seeds, bayleaves, cinnamon, cloves, and cardamoms. Sauté for a minute and add the soya chunks, asafoetida and sauté for 3 minutes on a medium flame.
2. Now add the tomatoes, chilli powder, turmeric powder and coriander-cumin seeds powder and sauté on a medium flame for 2 minutes.
3. Add the red pumpkin cubes, salt, sugar and 1½ cups of water and mix well. Cover with a lid and cook for 12 minutes or until the pumpkins are tender on a medium flame while stirring occasionally.
4. Add the lemon juice and mix well and remove from heat.
Serve Kaddu aur Soya ki Sabzi to your child to enjoy with steamed rice, roti, or just as it is.
